Mango yogurt chiffon cake trial

My nephew's birthday is coming up and he requested a mango flavoured cake. I found this recipe online and decided to try it out a day before baking his actual birthday cake.

The recipe was small enough for my 15cm tube pan (based on inner diameter at the top), and fitted the pan exactly (okay, it rose about 1cm above the rims of the pan during baking, but fell during cooling) you can see the picture below.

Taste was light and fluffy just as chiffon should be. The cake was a tall 10cm high (hear my squeal!) The taste of mango was hardly noticeable (make mental note to sub the mango yogurt with fresh mango puree & plain yogurt).

My daughter polished off two slices (almost a quarter) of the cake at one go. And our family of three had the cake for breakfast the next day. Texture was still as good the day after baking.

Recipe for 18cm tube pan (I used a 15cm tube pan) Egg yolks -3
Caster sugar - 25g
Oil -35g
Mango yogurt drink - 42.5ml
Cake flour -50g
Baking powder - 1/4 tsp
Salt - 1/8 tsp

Meringue
Egg whites - 3
Cream of tartar - 1/8 tsp
Caster sugar - 35g

Bake at 160 degree Celsius for 30 mins.

Homemade mango pudding

I had a mango in my kitchen and was racking my brains about what to do with it. I eventually decided to make mango pudding after a quick google search for recipes. I had the other ingredients on hand anyway.

The recipe was from http://www.thehongkongcookery.com/2016/05/hong-kong-style-mango-pudding.html?m=1, and it tasted just right (not too sweet, nor bland). I did not serve it with the suggested additional mango cubes and sweetened condensed milk, though.

However, I did not have those single-serve moulds on hand so I simply ladled the mixture into 4 round plastic takeaway containers. Thus when they were served, I simply scooped portions into serving cups/bowls, which looked terribly messy. My sisters agreed that the end result tasted better than it looked, so I was happy enough.

Watched "Coffee Prince"

Last week, I started on a new TvN drama 'Goblin' (official title "Guardian:The Lonely and Great God") and was so caught up with it that I re-watched the premiere episodes (ep 1-2)  nonstop whilst waiting for the next episode (ep 3) to be available after a week. Check out its trailer here.

I decided to catch up with one of the lead actors' Gong Yoo's previous work, one of the supposed classic K dramas "Coffee Prince". Here is the link to the MBCClassic youtube videos, though I watched my version on Viu.

I started watching "Reply 1988" after watching "Love in the Moonlight" and "Jealousy Incarnate". Partly because I wanted to see Park Bo Gum's and Go Kyung Pyo's previous works and also because it was on my KIV list .

Although I do not belong to the same generation as the leads and the songs are foreign to me (cos they are mostly in Korean), I enjoyed the storyline for the bromance and family stories. And of course, I was spared all the angst of "finding the husband", that was characteristic of the Reply series, because I only started watching after the whole drama was over.

Playdate with classmate at my home 18 Oct 2016

Y and her classmate having a playdate at home. Glad they had fun with the simple toys we had. I had to be their cafe's customer and order from the menu and pay using the play money I'd made for Y.

When his version of the MDBC OST was released, I was so excited I actually played it in the car for my husband to listen. And he could identify Hwang's voice as he had been watching some of the Chinese singing programmes. Now I am wondering whether to marathon "I am a singer" Season 4... Hahaha

My favourite of the list has to be the Lee Young version of "Because I Miss You"

Karissa's birthday cake 2016: strawberry yogurt-vanilla chiffon

My niece's birthday was coming up in Sept, so I decided to try some new chiffon recipes based on a book "Creative Baking: Chiffon Cakes" by Susanne Ng & Tan Phay Shing.

The main (pink) chiffon is strawberry yogurt-vanilla chiffon. The surrounding "belt" was made from strips cut from pandan chiffon sheet cake. Words and hearts from sheet cake.
